What is non-alcoholic still wine, and how is BOLLE's made?

Still wine doesn't go through the traditional or Charmat methods used for sparkling — it's fermented once, then aged and bottled without a second fermentation. That single fermentation is what gives a still white wine its body, texture and depth of flavour. Dealcoholisation removes it just as harshly as it does in sparkling wine: the esters, phenolics and aromatic compounds that carry a wine's character are stripped out along with the alcohol, leaving something thin and one-dimensional.

BOLLE's still wines go through the same patent-pending process as our sparkling range. After dealcoholisation, we conduct a second fermentation that rebuilds the body, aroma and finish a still wine loses along the way — using fresh grape juice and yeast, never additives or flavourings. No other producer in the world re-ferments dealcoholised still wine, which is why BOLLE Chardonnay and Chardonnay Reserve consistently place ahead of other alcohol-free whites in blind tastings.

Two expressions of Chardonnay, each twice-fermented (patent-pending) to keep the character a single dealcoholisation would strip away. Our Chardonnay is an 85% Chardonnay, 15% Silvaner blend sourced from La Mancha, Spain, with a bouquet of stone fruit, citrus and white florals. Our Chardonnay Reserve is the world's first non-alcoholic still white wine made entirely from a single-terroir French Chardonnay, sourced from Mâcon in Burgundy — pure, precise, and built for the moments when only the best will do.

Recognised by the industry, and built for the table. BOLLE Chardonnay won Gold and 95 points at the London Wine Competition, and 94 points from Some Good Clean Fun. Both wines are twice-fermented (patent-pending) using BOLLE's proprietary low-alcohol yeast strain — the same process behind our award-winning sparkling range. Every bottle is under 0.5% ABV, around 15 kcal per 100ml, vegan, with no added sugar and no artificial colour or flavour.
